Hōseki: a gem

Hōseki means "gem" in Japanese — and it names both a restaurant and a standard. Hōseki began in Burlington in 2021, then expanded to Downtown Oakville in June 2023. It remains a family-owned destination — proud of its community roots and uncompromising in its craft.

Executive Master Chef and co-owner Tim Nguyen brings over 30 years of training under esteemed Master Sushi Chefs along the American West Coast. Beside him, Head Chef Roy Takizawa contributes more than a decade of meticulous mastery, with apprentice Chefs Jack and Chef Aarjan carrying the tradition forward.

Edomae is the style of sushi perfected in Edo-period Tokyo, and it begins with the rice. Hōseki's chefs season theirs with Akasu, a vinegar derived from sake yeast — giving it a characteristic amber hue and a deeper, more savoury foundation beneath each piece of fish.

Each day, 30 fresh seafood selections are curated alongside rare seasonal specials, with premium ingredients imported from Japan weekly. Hōseki treats its fish like fine wine — meticulous curing and aging intensify natural flavors and refine texture.
